Our Raw A2 Cheddar is made from certified organic, 100% grass-fed milk produced by cows that naturally carry only the A2 beta-casein protein. This milk is left raw, preserving its naturally occurring enzymes and beneficial bacteria, and is carefully crafted into a classic cheddar with depth and character.
Because our cows are pasture-raised and graze on fresh grass throughout the growing season (with stored forages in winter), the milk reflects the land and the season. The result is a cheddar with a rich, full-bodied flavor, smooth texture, and a clean finish that develops more complexity as it ages.
